Poached Egg on Pumpkin Toast with Arugula and Tomato


2 eggs

1 slice of seeded pumpkin bread (Trader Joes)

1 tomato



Bring 4 cups of water to boil

Pour egg into a cup and then into the boiling water

Turn water to low

Simmer for 4 minutes

Place the poached egg on the toast with one slice of tomato and arugula

Green Goddess Smoothie


1 cup of frozen spinach

1 cup of frozen pineapple

1 cup of frozen mango

1 lemon

1 lime

2 scoops of collagen protein powder


Pour all ingriedients into vitamix or blender

Squeze lemon and lime into mixture

Add water 3/4 the way up to the top of the ingredients

Blend until smooth




Good Mood Smoothie


1 banana (I pre freeze mine)

2 tbsp of almond buter or peanut butter

1 tbsp chia seeds

1tbsp cocoa powder

2 cups of almond milk

2 majori dates pitted

1 tbsp of ashwagandha powder

2 scoops of collagen protein powder

1/4 cup of coffee (optional)



Add ice and all ingriedients to your vita mix or blender

Blend on high till smooth

Add a tsp of almond butter on top

Sip and enjoy.

Avocado toast with smoked salmon and tomato


1/2 avocado

2 slices smoked salmon (I like tj everything but the bagel salmon)

Two slices of bread (I love Dave’s killer bread)

Tomato sliced


Heat oven to 350 degrees

Toast bread to your liking

Spread the avocado over the bread

Add smooked salmon

Top with fresh tomato

Feel Good Pancakes


2 banannas

2 tbsp of almond butter

4 eggs

1/2 cup of rolled oats

1 tsp salt

1 tsp cinnamon

1 tbsp ashwagandha powder

2 scoops of collagen protein powder

1 tbsp ghee/butter

Mash bananas and add to mixing bowl

add almond butter and eggs beat together

add oats, cinnamon, and salt

Heat griddle to medium heat with 1 tbsp butter

Pour spoon full onto griddle

Flip after about 3 minutes

Top with bannans and chocolate if desired

Makes 2 servings

Stuffed Sweet Potato


1 Sweet Potato

1/4 cup spinach

1/8 cup onion

1 tomato

1/4 avocado

Dash of cinnamon

Pinch of salt and pepper


1 sweep


Cook sweet potato in instant pot or oven

Saute spinach, onions, tomatoes with cinnamon, salt, and pepper

Top sweet potato with veggies and avocado
